salted pear, creamy Jerusalem artichoke, and crispy malt

Lightly salted and baked coalfish with lobster ravioli,
wild oyster mushrooms, baked apple, and lobster bisque

Veal prepared in various ways with parsley roots,
fluffy parsley, winter cabbage, and creamy veal sauce

Carrot sorbet with wood sorrel mousse and
chocolate ganache, chocolate soil, and curd
